This is a small lot that came from a collective of small farmers, processed as honey which adds an extra layer of sweetness. Honey process is when the outer skin of the coffee cherry is removed but the sticky mucilage stays on the beans during the drying process. 

This sticky layer, very similar to honey, gives the process its name and adds unique sweetness and complex flavor to the bean.
The amount of mucilage left on the bean and the drying process determines the specific type of honey process (e.g., yellow, red, or black honey) and affect the coffee's final flavor profile.
